Descartar as águas de demolho e processar as castanhas hidratadas com o kombucha até obter um creme liso e homogêneo. Deixar escorrer e fermentar em tecido tipo voil (redinha, pano de fralda, etc.), durante 24h. Se quiser um sabor mais ácido e pronunciado, deixar por 48 a 72 horas.</div>

<span style="text-align: justify;">Lave bem 100g de alpiste e coloque para germinar. Achei que demora mais que muitas outras sementes que costumo germinar, mas não sei se é por causa do tempo frio que tem feito.</span><br />
<span style="text-align: justify;">Eu germino sementes assim: lavo bem, coloco de molho coberto com água por 12 horas. Escorro a água, lavo as sementes, coloco em um pote de vidro (pode ser vidro de palmito, azeitona, essas coisas) coberto com voil preso com elástico. Viro o vidro e deixo encostado com uma angulação de uns 45º no escorredor de pratos mesmo. Vai ficar germinando lá, dentro da estufinha que o vidro faz. Tem que lavar umas duas vezes por dia, de manhã e à noite. </span></div>

Conheço a jaca verde há alguns anos, desde que um amigo Hare Krishna me apresentou à coxinha de jaca. Depois disso criei vários pratos em que a jaca verde pode ser utilizada, todo mundo adora!</div>

A princípio, costumo "transformar" a jaca verde em três sensacionais possibilidades: frango desfiado, palmito e fundos de alcachofra. </div>
<div style="text-align: justify;">
Vejamos como:</div>

<div style="text-align: justify;">
Primeira coisa a fazer: ache uma jaca verde. Eu tenho encontrado pelas ruas mesmo, ou nas roças que visito a trabalho. Prefiro, às vezes, umas jaquinhas menores, pois rendem muito. Uma jaca um pouco maior que uma abóbora moranga rende duas panelas de comida.</div>

<div style="text-align: justify;">
Depois de retirar a jaca do pé e deixar escorrer um pouco o látex (uma cola branca espessa que pinga do talo cortado), pique a jaca em pedaços grandes, que caibam na sua panela. </div>
<div style="text-align: justify;">
Cubra com água. Se for cozinhar na panela de pressão, deixe por cerca de 8 minutos. Se cozinhar em panela aberta, espete com um garfo após cerca de 30 minutos e veja se está macia.</div>
<div style="text-align: justify;">

Feito isso, a jaca está pronta para ser desfiada. Eu separo as partes da jaca porque acho as texturas diferentes e isso ajuda a aproveitar melhor em cada prato. As jacas muito pequenas são mais difíceis de fazer a separação, mas jacas do tamanho de uma melancia rendem texturas variadas.</div>

Então, para separar as texturas e temperar:</div>

1) Existe uma parte carnuda entre as fibras que seguram os caroços e a casca grossa da jaca. Essa é minha parte preferida, que acho mais saborosa. Corte rente ao "pé das fibras" primeiro e depois corte bem junto à casca grossa, com uma faca afiada. Pique em pedaços para imitar fundos de alcachofra. Essa parte eu tempero com orégano ou tomilho, azeite de oliva, sal e limão. Um dentinho de alho picado miúdo costuma combinar. Salsinha picadinha também.</div>

2) As fibras que seguram os caroços: essas são incrivelmente parecidas com frango desfiado. Já vêm desfiadas, basta separar agora os caroços que vêm revestidos de uma polpa carnudinha (aqueles gomos que a gente come quando a jaca está madura). Eu costumo refogar as fibras como se fosse fazer um recheio de frango para torta. Refogo alho e cebola no azeite, colorau, açafrão, pimenta, azeitonas ou alcaparras, páprica, umas folhas de louro, ervas à escolha, tomate, pimentão, molho de tomate. Tudo isso ou alguns desses, à gosto. </div>

Esse se presta a recheios para salgados, tortas, cobertura de pizzas ou pra comer com arroz, com pão, com biscoitos.</div>

3) As polpas dos caroços: descaroce os gomos e pique em pedaços. Fica parecido com palmito quando temperados. Esse eu tempero com alho, cebola, azeite e sal. Um tomate picado, um pimentão. Uma pimenta dedo de moça. Tudo a gosto. Eu gosto de misturar e servir tudo cru mesmo. Fica ótimo como antepasto também, servido com pão ou como cobertura de bruschettas.</div>

A jaca absorve os temperos que você coloca, o que a torna um ingrediente versátil para criar muita coisa. Você pode inventar à vontade. </div>

DICA DE OURO: o látex da jaca cola em tudo, é um terror. Não sai com água. Não sai com água fervente. Não são com sabão. Maaaassss: é lipossolúvel, ou seja, se dissolve em óleos. Para retirar a goma das panelas, facas e mãos, o jeito é esfregar um papel toalha embebido em óleo de cozinha até dissolver tudo. Depois lavar com sabão ou detergente mesmo. </div>

Vale a pena, é saudável, zero gordura trans, zero colesterol, sem lactose, sem glúten, rico em vitaminas, minerais e fibras. E é um alimento vegetal proteico. </div>

Meu primeiro queijo vegano da vida. Encuquei que ia fazer e comprei na feira mandioca e batata-salsa. Numa casa do norte que vende a granel, comprei feijão branco. Coloquei de molho o feijão por quase 24 horas e tirei toda a casca antes de cozinhar. Cozinhei até ficar macio mas sem desmanchar. Cozinhei a mandioca e a batata-salsa juntas em pouca água. Aí levei para o liquidificador:</div>

Daí levei metade da massa ao fogo baixinho, em panela de barro e fui mexendo durante uns 20 minutos. Virou uma massa bem mais densa, amarela. Untei um pote quadrado e coloquei dentro, apertando bem. Depois de frio levei à geladeira e horas depois estava bem firme, não tão duro como as muçarelas em geral, mas dá para tirar fatias mais grossas. E colocar em sanduíches quentes, tapiocas, essas coisas.</span></div>
